Late for the Suppa Club

This was due a couple of weeks ago but unfortunately I got sick and then time gotDSC01036 away from me.  I made it right away but never got around to posting it.  Better late than never. 

Siri from the blog the Transplanted Baker was this round's hostess.  The two choices she gave us were Greek Pastitsio (pasta and lamb casserole) and Chicken Salsa Chili.  Chicken Salsa Chili won.

DSC01038It was very good.  The kids liked it and the twins finished it off after school the following day. I didn't really change much. I didn't use canned tomatillos because I couldn't find any so I used fresh.

Chicken Chili Soup, yes please! This sounds deliciously flavorful, and I love the additional protein and fiber from the beans. YUM!

I'm not sure what the "Suppa Club" is, but I'm assuming it's like Tuesdays with Dorie where you make a recipe along with everyone else and post it. Am I right?

Glad you're back and feeling better! Thanks for all the comments the other day! We love those. Alan likes getting comments on his B-Ball posts! I know his family reads those, but they never comment! :(

Oh Yummy! We are going to be starting into baseball in the next couple of weeks, and I love having recipes like these for after practices. Especially because it is still cold here for the first half of baseball season!!!!

mmmmm....I love tomatillos...fresh or canned but love them fresh the most! This looks really good and healthy!

OK, totally lovely. And I had to chuckle... can't use canned tomatillos, so you HAD to use fresh :) We should all be so lucky. I have at least 5 more months to wait for fresh!

Mmmmm, tomatillos.... I bet roasting them would add a great flavor. And I LOVE corn in soups.
