Mini Triple Layer Banana Cake & Finding the Yummiest Cream Cheese Frosting

DSC02112 I made this cake four or five weeks ago when I promised my sitter, Miss Karolyn that I’d make cream cheese frosting (this was the fave) for her mom who was baking 100 banana cupcakes for a baby shower.  Her mom, Beth wasn’t sure what cream cheese frosting tasted like so, I decided to use my brown speckled bananas to bake a  few cupcakes and top them cream cheese frosting for her to try.  I only baked 6 cupcakes and  used the rest of the batter to make a mini three layer cake and three mini bundt cakes (My bundt cakes stuck to the pan, so no photos.).   I also used this opportunity  to try out two new recipes.  I used this lovely layered banana cake recipe and its cream cheese frosting recipe which I found on the blog, Evil Shenanigans.

The cake was great the first day and even better I thought the second.  The frosting on the other hand was good but not great.  Miss Karolyn’s mom who I passed along all the cupcakes to liked both the cupcake and the frosting but I thought I could do better with frosting. 

DSC02122When Miss Karolyn had first asked about the frosting I called my blogging buddy Monica to ask her opinion about how many cups of frosting I would need and to see if she had a recipe to recommend.  She did and I should have listened up and made it from the get go.  I didn’t but luckily I talked to her again and she convinced my I needed her recipe a try.  Oh, my goodness!  It is hands down the yummiest cream cheese frosting I have ever had.  My only issue with it and every cream cheese frosting I’ve ever made is that it doesn’t hold it’s shape or at least mine doesn’t.  It  gets so soft.  Yes, I added powered sugar, as much as I could without over doing it.   Is there some secret I’m missing?  Help!

Vanilla Bean Frosting from Cupcake Bakeshop

  • 2 sticks (1 cup) unsalted butter, room temperature
  • 1 package (8 ounces) cream cheese
  • 2 teaspoons vanilla extract (I only added a splash as I used  vanilla bean paste)
  • 1/2 vanilla bean, seeds scraped out (I used 1Tbs vanilla bean paste)
  • 4-5 cups powdered sugar (I used 5 cups)

Using an electric mixer, beat the butter at medium speed until creamy. Add the cream cheese and beat until combined. Then add the vanilla extract, vanilla seeds, and 3 cups of powdered sugar and beat at low speed, occasionally stopping to scrape the sides and bottom of the bowl, until light and fluffy. Add more powdered sugar to arrive at the consistency and sweetness you like.

Makes enough to frost 24 cupcakes.

Holy Cow that looks good!

I agree with you about cream cheese frosting not keeping it's shape. I always pop the whole cake in the fridge after frosting it, so that I can the cream cheese frosting to set.

It's hands down my favorite frosting though, and this recipe looks GOOD!!!!

I don't know about why it doesn't hold it's shape. I think it's just a softer consistency with the butter AND the cream cheese in there. It worked great w/ my whoopie pies cause it was getting squished anyway, but on a cake I don't think there's much to do. I'll be checking back to see if you find a solution. : )

That banana cake looks delicious! I have used this cream cheese frosting many time and it is my absolute favorite. I get some my compliments and requests for the recipe. Although I have never had an issue with it not holding its shape. Mine actually gets a slight crust after a while. Maybe it has something to do using the paste?

Looks delicious.
When I make cream cheese frosting I have the best luck for getting a firmer frosting if I beat the powdered sugar in to cold butter until its crumbly, not smooth, then I add the vanilla and cream cheese in small pieces until I get the consistency I want.

It looks delicious Ingrid. I don't know what the problem is with cream cheese frosting holding its shape. I also worry about adding too much sugar and then it becomes too sweet. I love banana cakes and will have to add this to my list of banana recipes!

this cake looks excellent, mostly due to the fact that cream cheese frosting is involved. i'm not sure what's going on with your frosting getting soft, but my suggestion would be to cut back on the butter. i use equal parts cream cheese and butter and it tends to work out pretty nicely.

Your cake looks wonderful, soft frosting or not. (I'd stick in the fridge this time. My recipe calls for 2 pkgs cream cheese to 1 stick of butter and I've never had a problem.)

I think it just needs to be refrigerated and taken out to bring to room temp before serving. It's like buttercream that way, I think. I love cream cheese frosting, too! YUMMMMMMM

Oooh, that interior slice of cake looks so good. You know how I feel about banana, but I would so chomp down on this cake!

Like you, I use a little less vanilla extract and added more vanilla bean so it wouldn't thin out too much. THen I added the full 5 cups of frosting. It's still soft because it's cream cheese and there's no helping that, but after a short while it starts to get a crust on it. Refrigerating helps too. I don't thinks it's anything you did.

It's just the nature of the beast.

Ingrid the cake looks fantastic, where did you get your mini cake pans??? I think I need those babies! The frosting sounds and looks wonderful!! Maybe putting the cream cheese frosting in the fridge before you frost cakes would help to make it a little firmer.

I know I know, I had issues...why would my mom agree to such a thing? for awhile there I am sure I thought it was acceptable because she said yes to it...aw well...I love your kiddos names...McKenna has always been a fave of mine...I think if I had a boy I would totally name him Devon too...Jalen is really cool, but a good friend of mine has a daughter with the name so I wouldnt use it though I love it as well...but all is well I am not pregnant... haha!

This looks really, really good. After being a chocolate fanatic forever, I am growing to love vanilla. I am curious about vanilla bean paste -- have you posted about this? I'm not familiar with it. Does it come in a tube? Do you need to refrigerate it? Can you substitute it for vanilla extract with no problem in most recipes? Any insights would be most appreciated! Thanks :)
(Oh -- and enjoy your marinara sauce. Yum.)

There is someone who didn't know what cream cheese icing tastes like? I can't fathom that because I'd have to say cream cheese icing is my favorite. Exactly why I'd end up eating this whole cake myself!

The frosting looks fabulous - if you're doing anything wrong the pictures are not saying so. I adore cream cheese frosting - on banana cake,apple, spice... oh and there's that carrot cake I've heard of - all your photos are making me hungry.

Your cake looks delicious! I just made a buttercream for the hubbys BD and added fresh vanilla bean. Pretty much same recipe minus the cream cheese. Now I wish I would have used some cream cheese!

Oh my Ingrid- this is just pure luciousness. I was a big cookie fan before but over the years less and less. I prefer cakes and bars now. There are a few though that I just gotta have- like ginger snaps and molasses cookies.
