The truth or lies? You decide!

Danae from The Busty Baker pasted along this fun award.  As with most awards it comes with a few rules.

Cinnamon Caramel Popcorn with Pecans & White Chocolate Drizzle!

Is that not a mouthful or what, but boy was it good!  On Wednesday my buddy, Michelle from One Ordinary Day made some cinnamon popcorn that she claimed was quick, easy, and delish!  DSC02276Unfortunately as quick and easy as it may have been the kids’  homework and studying this week has left no time for baking. Lucky for me the next afternoon I found this recipe, for cinnamon caramel popcorn with pecans and white chocolate on Our Best Bites.  Was it coincidence?  I think not! Sara’s recipe even had the pecans and white chocolate I thought of adding to Michelle’s.  Fate and a break in homework had me making a batch of this last night.

I only made one change to this most delectable popcorn and that was to use Ghirardelli white chocolate bars instead of the almond bark.  While incredibly good the next time I make this and there will be a next time, I am going to change things up.  These changes are to satisfy MY taste and  not necessarily yours.  My first change will be to double the pecans added and leave them in bigger pieces.  My second change is a biggie.  Next time I’m not going to bake it, at all!  Both the twins and I agreed that it was equally if not more yummy with the caramel mixture still sticky and warm just poured over the popcorn and pecans. Because I’m not baking it I’ll toast my pecans before adding them.  The last change is again, one of personal preference but I’d leave out the white chocolate drizzle.  I don’t think it needed it.  The bites that had white chocolate seemed too sweet.  I just noticed that Sara changed her recipe and left out the salt (1/4 tsp) but I think the popcorn benefits from the salt (sea) and could probably stand another 1/4 tsp of it to cut through the richness of the caramel.

Cinnamon Caramel Corn with Pecans                      & White Chocolate            Recipe by Our Best Bites

12 C popped popcorn (about 1/2 C kernels)
1 C pecan halves, roughly chopped
1 C brown sugar
3/4 t cinnamon
1/4 C karo syrup (or honey makes a good substitution)
1 stick real butter (1/2 C)
1 tsp vanilla
1/2 tsp baking soda
3 squares almond bark (about 4 oz)

Preheat oven to 250 degrees
Place popcorn and chopped pecans in a large bowl and set aside.
Combine brown sugar, cinnamon, and salt in a 4 C capacity microwave safe bowl.  Mix well.  Chop butter into chunks and place on top of sugar mixture.  Pour corn syrup over the top of everything.  Microwave on high for 30 seconds and then stir to combine.  Return to microwave and heat for 2 minutes.  Remove and stir and then microwave for 2 minutes more.
Remove from microwave and add in vanilla and baking soda.  Stir to combine.  Mixture will foam and rise.  Pour caramel mixture over popcorn and pecans and stir very well so everything is well coated. 
Spread popcorn mixture onto a foil-lined jelly roll pan.  Place in oven and bake for 30 minutes, stirring every 10 minutes. 
Remove from oven and spread out on a large piece of parchment, waxed paper, or foil.
Melt almond bark according to package instructions.  Drizzle over popcorn mixture.  When almond bark is hardened and popcorn is cool, break into chunks and enjoy!  (I might have topped some vanilla ice cream with the last of the it! :))

Here’s Michelle’s recipe for cinnamon popcorn

Cinnamon Popcorn

  • 8-10 c. of popped popcorn
  • 1/2 c. unsalted butter, cut into pieces
  • 1/3 c. granulated sugar
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 hefty pinches of kosher salt

Preheat oven to 300 degrees.  Pop popcorn and spread onto a large cookie sheet.  (Michelle used a hot air popcorn popper.)  Melt butter, sugar, and cinnamon in a microwave-safe bowl until sugar is dissolved and butter melted, 1 – 2 minutes.  Stir in vanilla extract.  Spoon butter mixture over popcorn and sprinkle with salt.  Toss to coat as many pieces of popcorn as you can.  Place in oven for 10 minutes.  Allow to cool completely.  If storing {not likely!}, place in an airtight container

Wow, THANKS!

Four awards!  In the past several weeks or so I've received four awards from some really cool bloggers.  Sorry it's taken so long to properly thank you and pass these along!

The first award is from Donna at My Tasty Treasures.  If you sisterhoodaward haven't been by her blog you are seriously missing out.  Hers is filled with not only tasty, you can make this at home food but is also over flowing with amusing comments that will have you bursting out laughing and blushing if you're like me.  I leave you with this warning.... be careful who's around you when you read her blog as you WILL laugh, loudly,  the kind you can't smother, that will have anyone who can hear you inquiring as to what's so funny.  I've had the misfortune of reading her at work (oops) and when my kids were around.  Both times I couldn't really say what was funny or repeat the joke. Which means you just get that look, you know, the you're a weirdo look!  LOL!

3 awards The second award comes from Lisa at Parsley, Sage, Desserts,and Line Drives. First things first, you might have noticed that one of my B's stands for baseball and you might have noticed that her blog name has "line drives"  in it.  See the connection? Um, for those of you that aren't familiar with the term "lines drives" it's the name of a type of hit, the best kind outside of a home run.  You know she'd rock in my book for that alone.  Before I tell you about her kitchen awesomeness  I have to mention that she's a HUGE NY Yankees fan.  Okay, yes, on to the food.  Last year Lisa severally injured her knee and has been baking from a wheel chair and until a month or so ago from the kitchen at her rehab facility.  Go now and check out what she's able to create (works of dessert art) from a strange kitchen and her wheel chair.  Seriously, how impressive is that?  I won't even get started on how lame I feel when I swing by her blog and see what she's up to and here I am making boxed brownies. (though I did make a cake & a tart)

Honest_ScrapThe third one isn't an award but a meme and is from Monica at  Lick the Bowl Good.  :-)Monica's blog is a recent one that I've  found and have been reading.  I've already made two of her recipes  and both were  hits.  The first, graham cracker toffee was gobbled up so fast that I didn't get a chance to take any pictures.  I made it a second time in hopes of getting some photos but it was eaten up even faster.  My children do not, will not wait for me to take photos unless I'm standing over the dessert and threatening bodily harm.  Because everything I make is for them that's not going to happen, so no toffee photos. The second recipe I made, Old Fashion Coca-Cola is one I did get photos of and was lick the (frosting) bowl good. 

kreativ_blogger_awardThe last award is from Charity at Sweet Charity Pie.  If you remember my Double Chocolate Layer Cake and Red Velvet posts you may remember that they were  a collaboration between Charity and I.  I don't think Charity gets her full props.  Charity is very familiar with the scientific aspects of baking and if you've read some of her TWD posts will have noticed that she's great at reading a recipe and seeing where the recipe could go wrong or wouldn't be to her tastes and successfully tweaking it.  I'm not talking about switching semisweet chocolate for milk either.

I sincerely hope that you visit each of their blogs.  You'll come away with great recipes, having learned something, been inspired, or a side that aches from laughing so much!

This is part I hate, narrowing down who these get passed to.  I know that there are "rules" to each of these but I'm gonna make my own and pass the awards along to all blogs that I enjoy and I think will appreciate them.  Some of them you may recognize and some may be new to you. 

Now on to ten honest things about me

  1. I LOVE my family, especially my three children.  I worry that maybe Jalen, one of the Twins doesn't realize how much.
  2. I'm a take charge person; BOSSY.
  3. I worry A LOT.
  4. I'm a cancer, the crab, and that is exactly me, hard shell on the outside protecting a soft inside
  5. I'm extremely loyal, you don't like "them" then I don't like "them" ...bottom line!
  6. I'll give away my food, your lunch, the kids baseball snacks to the homeless on street corners.
  7. I have a soft spot for the elderly.  (Love to hear about the the "good ol' days"!)
  8. I've been trying Kristen's idea of greeting my honey each night as soon as he comes into the house with a warm hello, hug, and kiss.  (Nothing crazy Donna, the kids are usually still up!)
  9. I'm Puerto Rican but all American.  I tear up at God Bless America, the National Anthem, and all the other songs that proclaim how wonderful our country is and how lucky we are to have men and women who leave their families to protect our privileges. 
  10. If you knock me down, I'll get right back up and keep coming at you until you give up.  Can't stand a bully!
  11. Bonus......I sincerely appreciate all of you that take a moment to read my blog and leave me encouraging and thoughtful comments. 

Will she ever be done?  Yes! Peace out! :-)

An award & off on a tangent

lovely_blog_awardThank you Jodi for the lovely award.  Jodi has a wonderful blog herself called Live Today, Cherish Yesterday, Dream Tomorrow.  Isn't that a great name?  I love it.  A thought we all need to keep in mind.

The rules to accept this award are to link to the person who gave you the award as well as select seven bloggers to pass this award on to.

I hate passing on awards.  Okay, that didn't come out right.  I hate having to chose a few bloggers that I'm supposed to pass an award to.  You've it heard before I know but there are so many really good blogs out there and not just the "famous" ones but ones that are entertaining, thought provoking, or have tried and true recipes that they are passing along. It's difficult to chose.  When you're new to blogging getting those first couple of awards are exhilarating and keep you motivated in trying to put your best foot forward. 

I'm comfortable with my blog. I'm never going to write a cookbook, win awards for outstanding photography, or write witty passages that everyone is anxious to read.  I'm the "every man's" blog.  Maybe one day I'm funny, the next an interesting recipe, another a really good photo, and hopefully once in a while something thought provoking.  What I'm hoping my blog accomplishes if anything is for it to encourage bakers such as myself to get out of their comfort zone and into their kitchens.  'Cause if I can YOU sure can!

Where'd that come from?  I guess in reading some of the New Year's posts it's gotten me thinking about where I want to go with all this.  While I'd of course like to get more daring in my baking, better at my writing and  photography I'm happy with what I have here in my teeny tiny piece of the blogosphere.
