I’ve seen a lot of good looking and yummy sounding cobblers go around the blogosphere this summer but had yet to make one. That changed after I found some good looking peaches at the grocery store the other day and then saw Keeley’s apple cobbler post.
I took Keeley at her word when she said her recipe could be adapted to suit any fruit and used my peaches. The recipe below reflects my changes to her recipe. I’d like to mention one thing about the cobbler, during the course of baking the butter floated to the top. I got a little freaked out thinking I goofed but after the cobbler baked for the full 45 minutes the butter had settled back.
Thanks, Keeley! Your cobbler got a thumbs up from my gang! :)
Peach Cobbler, adapted from My Life on a Plate
3/4 stick of butter, melted (6 tablespoons, please use real butter)
3/4 cup self-rising flour (if you don't have any, make your own)
1/3 cup sugar
1/3 cup brown sugar
1/4 teaspoon cardamom (optional)
1/2 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
3/4 cup milk
3 to 4, peaches peeled, cored, and sliced*
Preheat oven to 350 degrees.
Pour melted butter into the bottom of a 1 1/2 quart baking dish.
Whisk together the flour, sugars, and spices. Whisk in the milk. Pour this batter over the melted butter.
Spread peaches evenly over the batter. Do not stir. Bake for 35-45 minutes, or until crust is golden brown. Serve warm with vanilla ice cream or fresh whipped cream.
*Note: Next time I would cut my fruit into thicker pieces. I’d like my fruit to have more bite to them. After baking for 45 minutes they were mushy, tasty but mushy.
I just had a peach for breakfast and I'm thinking your cobbler looks absolutely yummy! I always get really scared when I see butter bubbling when I bake something, but the sigh of relief when you see it all turns out fine is priceless!
ReplyDeleteThat is a treat I adore! What a scrumptious looking cobbler.
ReplyDeleteCheers,
Rosa
Looks fabulous, now I feel like peaches.
ReplyDeleteWow, I would love a piece of that for breakfast this morning! Yum!
ReplyDeleteAwww! Ingrid, thanks for making my cobbler! I just made a cherry cobbler with a modification to this basic recipe. Even my mom, who swears she doesn't like dessert, came back for seconds! You're right, you need to bake it for the full 45 minutes or so. I know it looks weird at first, but it's sooo good when it finishes baking.
ReplyDeleteI'm already on that bandwagon, Ingrid! I love crisps, buckles and cobblers! (and always with ice cream on top too!)
ReplyDeleteYour peach cobbler looks divine.
I am drooling over your picture... YUM!!!!
ReplyDeleteIce cream and cobblers are a perfect combination. I just have to have ice cream with it!!!! Your peach cobbler looks so good and it's been a good summer for peaches....I've gotten great ones lately!
ReplyDeleteThe peaches are sooooo good here right now. I made a tart the other day that was a total bust, so I'm wishing I'd have done this instead. Looks yummy.
ReplyDeleteI haven't made a cobbler yet this summer=( I'm glad you got to! I love pictures of cobbler with a scoop of melting ice cream on top!! Thanks for putting that in;)
ReplyDeleteIngrid we must have both had peach cobbler on the brain! So funny.
ReplyDeleteYour cobble looks yummy as well, and I intend to try it out really soon.
Thanks for sharing,
Jonna
Get Off Your Butt and BAKE!
Your cobbler looks so good! I like the idea of baked peaches... I'll have to try that next time! Happy I'm not the only one with the weird butter situation happening on top.
ReplyDeleteI never get tired of cobblers. They're just so darn tasty! Yours is no exception, thanks for sharing!
ReplyDeleteHow's your summer going? Hopefully good!
Yayy for cobbler! I've never had the butter rise, but it came out perfect in the end, so it hardly matters!
ReplyDeleteThis looks like the perfect cobbler! I actually had something similar happen with the butter in a crisp recipe I made recently, but mine didn't turn out nearly as pretty as yours. :) I'll have to give this a try!
ReplyDeleteJust delightful. I LOVE cobblers, but you already know this! I have some apples I seriously need to use up...
ReplyDeleteI just made a cobbler the other day too! Our recipe are completely different, but both resulted in a warm, comforting peachy dish! Looks delicious!
ReplyDeleteLooks wonderful! I just made blackberry cobbler out of the Pioneer Woman cookbook and it was really good too. But I've got peaches now so I think I'll try them in this recipe.
ReplyDeletei love peach cobbler. i esp love a peach and blackberry cobbler :)
ReplyDeleteI love peaches in dessert... the cobbler looks amazing.
ReplyDeleteSo versatile, fruit cobblers make a delicious dessert or a tasty breakfast.
ReplyDeleteMimi
mushy peaches don't bother me, particularly if some buttery batter is acting as their blanket. lovely cobbler, ingrid!
ReplyDeleteMy kinda yummy. So glad you jumped on the cobbler band wagon!
ReplyDeleteThat looks so good! I love peach cobbler! I would have no problem with the layer of melted butter on top that then settled in...mmmmmmmm....
ReplyDeleteWhat a fine fine bandwagon to jump on, I'd say. Yumm!
ReplyDeleteI love cobbler. I haven't had it in ages.
ReplyDeleteoh that looks just heavenly, especially with that scoop of ice cream!
ReplyDeleteYum! Cobbler does not get enough respect in the dessert world, in my opinion. I'm glad to hear there is actually a cobbler bandwagon. Yours looks fabulous!
ReplyDelete2 posts in one week- you're putting me to shame!
ReplyDeleteAnd what was that about not liking warm mushy fruit??? A cobbler is about as mushy as it gets and this looks good. Despite my love for berries, peach cobbler is my favorite. especially with a big 'ol scoop of vanilla ice cream.
Will you come bake for me?
oh my gosh, that looks heavenly!
ReplyDeleteOh yeah, right up my alley! looks YUMMY! Love peaches here!
ReplyDeleteThis is what I'm making with the rest of the haul of peachs I have. I love cobblers, and this one looks amazing. Hope things are well with you and yours..hope to talk soon :)
