I’ve seen a lot of good looking and yummy sounding cobblers go around the blogosphere this summer but had yet to make one. That changed after I found some good looking peaches at the grocery store the other day and then saw Keeley’s apple cobbler post.
I took Keeley at her word when she said her recipe could be adapted to suit any fruit and used my peaches. The recipe below reflects my changes to her recipe. I’d like to mention one thing about the cobbler, during the course of baking the butter floated to the top. I got a little freaked out thinking I goofed but after the cobbler baked for the full 45 minutes the butter had settled back.

Peach Cobbler, adapted from My Life on a Plate
3/4 stick of butter, melted (6 tablespoons, please use real butter)
3/4 cup self-rising flour (if you don't have any, make your own)
1/3 cup sugar
1/3 cup brown sugar
1/4 teaspoon cardamom (optional)
1/2 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
3/4 cup milk
3 to 4, peaches peeled, cored, and sliced*
Preheat oven to 350 degrees.
Pour melted butter into the bottom of a 1 1/2 quart baking dish.
Whisk together the flour, sugars, and spices. Whisk in the milk. Pour this batter over the melted butter.
Spread peaches evenly over the batter. Do not stir. Bake for 35-45 minutes, or until crust is golden brown. Serve warm with vanilla ice cream or fresh whipped cream.
*Note: Next time I would cut my fruit into thicker pieces. I’d like my fruit to have more bite to them. After baking for 45 minutes they were mushy, tasty but mushy.

I just had a peach for breakfast and I'm thinking your cobbler looks absolutely yummy! I always get really scared when I see butter bubbling when I bake something, but the sigh of relief when you see it all turns out fine is priceless!

Awww! Ingrid, thanks for making my cobbler! I just made a cherry cobbler with a modification to this basic recipe. Even my mom, who swears she doesn't like dessert, came back for seconds! You're right, you need to bake it for the full 45 minutes or so. I know it looks weird at first, but it's sooo good when it finishes baking.
I'm already on that bandwagon, Ingrid! I love crisps, buckles and cobblers! (and always with ice cream on top too!)

The peaches are sooooo good here right now. I made a tart the other day that was a total bust, so I'm wishing I'd have done this instead. Looks yummy.

Your cobbler looks so good! I like the idea of baked peaches... I'll have to try that next time! Happy I'm not the only one with the weird butter situation happening on top.

This looks like the perfect cobbler! I actually had something similar happen with the butter in a crisp recipe I made recently, but mine didn't turn out nearly as pretty as yours. :) I'll have to give this a try!

Looks wonderful! I just made blackberry cobbler out of the Pioneer Woman cookbook and it was really good too. But I've got peaches now so I think I'll try them in this recipe.

And what was that about not liking warm mushy fruit??? A cobbler is about as mushy as it gets and this looks good. Despite my love for berries, peach cobbler is my favorite. especially with a big 'ol scoop of vanilla ice cream.
